お米と野菜が同じ「生鮮食品」に分類されることはご存知でしょうか。
野菜と同じように適した環境で保管しないと鮮度をどんどん落としてしまい、食べられない状態になってしまいます。収穫した玄米を精米してそのままいただくのが最も鮮度が高い状態で食べることができるのですが、あまり現実的ではありません。
九州ライスストレージでは、この収穫時の状態を長期的に維持する仕組みをもっています。
夏から秋にかけて収穫したお米は水分が多く、柔らかいのが特徴です。九州ライスストレージでは収穫したお米を玄米の状態にして、温度15度、湿度70〜80%の低温倉庫で保管します。
玄米は人間と同様に呼吸をしています。玄米は温度が高くなると呼吸が活発になり、体内の水分が外に出ていって鮮度がみるみるうちに落ちていきます。そのため、玄米の呼吸が安定する環境で保管することで、収穫時の状態を長期的に維持できます。
コーヒーは挽きたてが格別に美味しいように、お米も精米したてが一番美味しいです。
お米に賞味期限はないのですが、精米後は一気に劣化が進むため、夏は3週間、冬は2ヶ月、それ以外の季節は1ヶ月が「お米が美味しく頂ける期間」の目安になります。
九州ライスストレージでは、「配送依頼」を請けてからの精米になるので、常に新鮮なお米をお届けできます。
精米後のお米は劣化が進みますが、保管している環境によっては目安どおり鮮度を保てるか、一気に酸化が進んでしまい美味しくないお米になってしまうのかの大きな分かれ道です。
ポイントとしては、「10〜15度の温度」「直射日光と高温多湿をさける」「密閉容器を使って酸化を防ぐ」「芳香剤や洗剤などのにおいのするもののに置かない」の4点です。
お勧めは、「野菜室で蓋のついている密閉容器に入れての保管」です。
「お米は持ち運びが面倒だから多めに買ってるけど実は保管場所がなくて困っている。」というお悩み。九州ライスストレージでは、ライフスタイルや保管場所のサイズに合わせて、3、5、10kgから欲しい分だけ取り寄せられます。
